This is a heavily adapted and changed recipe of one I found online, made up/adapted to fit the slimming world syn mantra.

It is gooey, chocolatey sweet and oh-so low syn value too.

For 6/8 brownies you will need:

-400g Sweet Potatoes (roughly 2)
-100g Dark Chocolate
-30g Porridge Oats
-10g/2 Tablespoons Dark Cocoa Powder
-2 egg whites
-1 tablespoon Sweet Freedom or sweetener if this isn’t handy
-Handful raspberries or strawberries for your preference

A dollop of Qark mixed with sweetener to serve.

Total time prep and cook: 30 minutes.

Preheat your own to 200/180 for fan.

Step One
Cut your sweet potatoes up into bite-sizes and pop in he microwave for 6 minutes (microwave dependent so keep an eye) then mash. Whilst mashing, melt your dark chocolate in the microwave for approximately a minute, again microwave dependent.

Step 2
Pop the porridge oats, cocoa powder, sweetener/Sweet Freedom and egg whites in a bowl. Pour in the sweet potato mash and chocolate and STIR!

Step 3
Cut your strawberries up and fold them in, or raspberries if using.

Pop in an oven safe dish and bake for 15-20 minutes.

Take out of the oven and serve hot (or cold) with a dollop of Qark whipped with some sweetener to serve with a topping of your chosen fruit.

Based on the chocolate content of 6 deep/8 shallower brownies, I’d put these at around 4/5 (for safe measure) Syns a portion. Sweet Potatoes, strawberries/raspberries (uncooke) and eggs as your free food, 30g porridge oats divided between portions is so small and basically synless which just leaves the 100g chocolate and cocoa powder! Note the if you leave the fruit out of the mixture (and keep for just on top) it’s lower synned even more!If you’re interested in any further recipes, please do let me know 🙂
